With the help of my spiralizer, creating this very quick recipe for mini sweet potato pizzas is so easy to do. Just a few basic ingredients and then you can get creative with your toppings.
2 medium sweet potatoes
2 tablespoon olive oil or other high heat oil
Salt & Pepper
Coconut Oil (optional)
1/2 red onion, sliced
Using the spiralizer, cut your 2 sweet potatoes into thin spirals. Heat oil and cook the sweet potatoes until tender, remove from heat and cool for a few minutes. Scramble your egg and add to the sweet potatoes, stir evenly and set into ramekins about 3/4 to 1 inches thick. You do not want them to be too runny because they will be hard to fry later.
What you are doing is forming your pizza crusts. You should be able to make 4-6 pizzas depending how thick you make them. Let them set in the fridge for 30 minutes or so.
While you are waiting for the potato to set in the fridge, grill your onions and set aside. I like to cook my onions with coconut oil, it gives a nice flavor to the onions, even for the anti-onion type of person, like myself.
Remove the sweet potato pizzas from fridge and brown them in a frying pan until crisp and nicely browned. Remove from the pan and place onto a cookie sheet, add a tablespoon or so of marina sauce, then layer on the mozzarella cheese, arugula and grilled onions and bake for 10-15 minutes at 350 degrees or until cheese is melted.
