Recipe: Ponzu Vinegrette Dressing

I’m letting my Asian ancestry shine through. I really love the flavor that you get when cooking or using ponzu sauce in recipes. Often times I eat just plain tofu, instead of using your average soy sauce, I prefer dressing my tofu with Ponzu sauce. It adds that great saltiness, but also a refreshing citrus and that’s even better than just squeezing a lime or lemon over something. Just thinking about it is making my mouth water. It’s just so YUM!

Anyway, as I mentioned before, I’ve been on the hunt for various dressings I can make that are quick, easy and ingredients I have in my home on a regular basis. Do, here’s one I found in my Vegetarian Times magazine, give it a try and let’s see if you fall in love with ponzu like I have.

Ingredients:

  • 1 1/2 tablespoon rice vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon avocado or peanut oil
  • 1 teaspoon low sodium soy sauce
  • 1 teaspoon minced fresh ginger
  • 1/2 teaspoon sugar
  • 1/2 teaspoon grated lemon zest

Whisk it all together and set aside. Prepare your salad mix and toss with your fabulous, homemade dressing.
