Recipe: Lemon Citrus Salad Dressing

As much as I enjoy learning about cooking various types of vegetarian and vegan meals, some of them take a lot of work, advance planning and preparation.  There are days that I just want to sit down with an awesome salad, filled with all kinds of green goodness, top it off with some salad dressing and devour it.

olive oilUnfortunately, many of the salad dressings that I like are not made with organic ingredients.  So, I have decided over the next few weeks I am going to go on the hunt for some EASY to make (3-4 ingredients) salad dressing recipes. Recipes I can make for a single meal OR multiply so I can bottle it and keep for additional salad creation moments.

One of the first salad dressings I have made is a lite citrus salad dressing. Super easy, with ingredients you probably already have in your home, so no special trip to the grocery store, and ready in under 5 minutes.  So, here we go:


2 tablespoon olive oil
2 tablespoon fresh lemon juice
1 minced clove of garlic
1/2 teaspoon of lemon zest

Whisk it all together, let it sit while you prepare you salad. Toss and serve, or just eat it all yourself.  It’s clean, fresh and delicious.  Best of all it’s fast and easy.  Multiply out the portions if you wish to make a larger batch of dressing and refrigerate it for future use.  Enjoy!
