Now that I am on this vegetarian adventure, I am looking at all the things I used to eat that I thought were healthy. Learning whether to keep eating it, modify my intake or stop all together.
One of the grains that I like to eat is couscous, but in my research I have come to realize that couscous is NOT a grain. It is more of a pasta, because it is a combination of semolina flour and water. There are also different types of couscous, which I also did not realize. There are the large Israeli couscous (aka pearled couscous) and the small Moroccan couscous (about 3 times the size of cornmeal).
I have also come to learn that couscous does not have the best nutritional value, unless you eat the whole wheat version of couscous. And you also need to be careful of how much of it you eat because the calories do add up. So, if you are on a weight watchers or similar caloric monitoring diet, be careful how much couscous you eat.
