I was looking for something to serve with my BBQ seitan ribs and decided on some cauliflower rice. It is an easy recipe and if you are looking to replace some of the starch in your diet this is a GREAT replacement. Takes a little bit of preparation, but cooking will just take 5-10 minutes
Medium size cauliflower – washed and separated into sections
1/2 yellow onion
1 clove of garlic
1 tablespoon of your favorite cooking oil (olive, sunflower, or coconut oil)
Salt & Pepper
I like using sea salt or himalayan pink salt in all of my cooking.
Using a cheese grater, grate the entire cauliflower into rice sized granules. Some people like to use a food processor, but I think a large cheese grater works great and less to clean up.
Heat up your frying pan, add oil, garlic and onion. Cook until onions are transparent. Add in your cauliflower until tender and add your S&P to meet your seasoning liking.
Serve while hot with your favorite main dish.
